Salad Days

For the last several months, I've been seriously slacking in regard to my health. My weight has increased by five kilo's and blood pressure is up in the hyper-tension range despite taking drugs that limit this. As a result, I've become lethargic, tired and generally begun to resemble a tub of lard.

I already know I'm on borrowed time, so this really is inexcusable. So, on Monday I started eating healthier by preparing a salad a day for my main meal instead of tasty but harmful other foods. I've already dropped one kilo, feel better and my BP has dropped a little, too. The next step is back onto the cross-trainer...

My culinary creation above consists of: Mixed leaves, one boiled egg, cucumber, cherry tomatoes, a stick of celery, spring onions, sweet corn, beetroot slices, raw mushrooms, blueberry fruit, Greek feta cheese all drizzled with extra-virgin olive oil and topped with a dash of honey and mustard dressing. Maybe I can re-train as a Chef?

It's still a major trauma avoiding the call of chocolate biscuits and savoury snacks, so to combat that seductiveness, I've been munching on bread-sticks. And it works!

  1. Salads are nice but with this kind of weather, I'd go for soups : they are quite filling too ! A soup and maybe a litle rice/pasta or some healthy bread.
I make three kinds of soup that I really enjoy : cauliflower and cumin, carrots and coconut milk and courgette with cheese and herbs... there are endless possibilities !

That's It Folks!

The gate is now shut. With no one around, it's time to turn off the lights and leave. It's been fun and maybe one day someone will...
